Ingredients

  • 3 1/4 cup all purpose flour
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 2 teaspoon baking soda
  • 4 eggs - beaten
  • 1 cup vegetable oil
  • 1/3 cup water
  • 1 teaspoon lemon juice
  • 2 cups grated zucchini
  • 1 cup dark chocolate chips

Directions

  • Preheat oven to 350F
  • Spray 2 loaf pans non stick spray.
  • Mix dry ingredients together.
  • Separate bowl mix all wet ingredients, remember to peel zucchini before grating.
  • After both bowls fully mixed, combine into 1 bowl.
  • Pour evenly into each loaf pan and bake uncovered apx 1hr. Check to determine doneness with toothpick test (if toothpick comes out wet, not ready).
  • Let cool 15-20 minutes, slice and serve!
